Chocolate Kiwi Popsicles
serves 4-6 Ingredients- 1 kiwi
- 1 cup dark chocolate
- 1/2 cup coconut oil
Instructions- Peel each kiwi and slice into inch-thick rounds.
- Push a popsicle stick into each slice, freeze 1 hour on waxed paper
- melt chocolate and coconut oil over a double boiler, remove once melted
- let cool to room temperature
- dip each kiwi-pop in chocolate mixture (it will harden immediately)
- place back on waxed paper to refreeze or serve immediately
This recipe is great for doubling; make the batch as large as you like!
