Beignets (traditional french pastries)
Ingredients- 1 cup boiling water
- 1/4 cup shortening
- 1/2 cup sugar
- 1 tsp salt
- 1 cup evaporated milk
- 1 package cake yeast
- 1/2 cup lukewarm water
- 2 eggs (well-beaten)
- 7 1/2 cup sifted flour
- 4-5 cup vegetable oil
Instructions- mix shortening, salt, sugar. pour water over mixture, combine
- add milk, combine
- activate yeast in 1/2 cup lukewarm water
- when shortening mixture is lukewarm, add activated yeast, eggs, 4 cup flour
- beat hard, add enough flour to create soft dough
- place in greased bowl, grease top of dough
- cover with waxed paper or lid, refrigerate 1 hour
- roll into 1/4 inch thick sheet (do not let rise from this before frying
- cut dough with scallop-edged cookie cutter
- deep-fry in hot oil at 360* until one side is brown, flip and repeat.
- drain over paper towels or on cooling rack
